The chafing dish –that raised, silver dish so ubiquitous at buffets where food needs to be kept warm – has been used in catering for more than 100 years with little to no improvements. In efficiency terms, it lags behind, costing on average €1.20 per hour to operate.
However, CBL Equipment has unveiled the Castle Chafer, which has reduced the running
cost to between 20 cent and 25 cent per hour.
